OPERATION: The upper and lower interdigitating cups capture the fruit and press it against the upper and lower cutters, which make circular cuts on both sides of the fruit. This prevents the essential oils from penetrating into the juice when squeezing. The downward movement of the upper cup pushes the fruit contents through the lower cutter into the filter tube. At the same time, the rind is ejected through the upper cup and the oil is rinsed by a water spray system and transported as an emulsion for later recovery. The perforated piston ascends inside the filter tube, causing the juice to reach the juice box, after the pulp has been filtered through the holes in the filter tube wall. Residual nuggets, membranes and fibers are expelled through the inner orifice of the piston.
