Basically those APV VT(vertical) SSHE (Scrape Surface Heat Exchanger) provide exceptonal performance for heating or cooling of a wide range of medium viscosity products including soups, dips, sauces, creams, soft cheese, fruit and vegetables puree, abby food, fats and oils. As per the WORKING PRINCIPLE: Product flows through an inner tube which is surrounded by a jacket containing a heating or cooling medium. Blades, attached to the shaft in a staggered configuration, continuously remove product from the heat transfer tube walls to increase heat transfer efficiency, reduce fouling and ensure long runtimes.
