DESCRIPTION The machine called ‘scalder’ has the function of removing, cleaning and preparing the product by means of cooking produced by a water and steam bath inside the machine, for different products. The process starts with the addition of product in the feed of one of the sides. The product is transported by the drum paddles and meets the supplied water and steam at a temperature sufficient for the processing of the product so that optimum cooking is produced from the infeed to the outfeed. The product ends the stage at the outlet, where it falls through an outlet hopper awaiting collection for the next process. Rotary blancher with temperature control and modular valve.
